CRANBERRY MAPLE PECAN BAKED OATMEAL
This Cranberry Maple Pecan Baked Oatmeal is ideal for Christmas morning or each time you want a warm, at ease breakfast.
I’m already starting to reflect onconsideration on Christmas morning breakfast, which by the time we get round to eating is extra like brunch. For me, breakfast is manner greater thrilling that Christmas dinner. alternatively, I’m a breakfast lover via and thru.
Growing up there have been matters that have been usually on the desk Christmas morning, an egg casserole, my preferred Christmas morning smoothie and usually cranberry orange desserts or a few type of baked excellent. It became my favourite breakfast of the year, but that still could have been because my mom best made it as soon as a 12 months.
BAKED OATMEAL
- 2 cups old fashioned rolled oats, gluten-free if needed
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup toasted chopped pecans
- 1 3/4 cup unsweetened almond milk, or milk of choice
- 5 tablespoons maple syrup
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon orange zest
- 1 cup fresh or frozen cranberries, halved
CINNAMON MAPLE GLAZE
- 1/2 cup powdered sugar
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 2 teaspoon maple syrup
- 2-3 teaspoon milk
- Preheat oven to 350° F. and spray a 9x9 or similar baking dish with cooking spray.
- In a huge bowl stir together the oats, cinnamon, baking powder, salt and pecans. In a separate bowl whisk collectively the milk, maple syrup, egg, orange zest and vanilla extract.
- Pour the wet ingredients in with the dry and stir till combined. Stir in the cranberries. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until the pinnacle is golden and the oatmeal is set. allow it rest for five-10 minutes before serving.
- Whilst the oatmeal rests, whisk collectively all of the ingredients for the glaze. Drizzle desired quantity of glaze over the oatmeal. Serve with any extra glaze and maple syrup.
