SKINNY BEEF ENCHILADAS RECIPE
  • 12 small corn tortillas
  • 1 lb. extra lean ground beef or ground turkey
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1 (28 oz.) can red enchilada sauce
  • 1 to 2 cups shredded cheddar cheese, divided

TOPPINGS

  • sliced black olives
  • chopped fresh cilantro
  • salsa
  • light sour cream
  1. Preheat oven to 350 levels F. Grease a 9x13-inch baking pan with non-stick spray.
  2. In a large skillet, over medium-excessive warmness, brown and disintegrate floor red meat with the chopped onion.
