MY GO TO HEALING BOWL




Feeling a bit below the weather or in need of a good immune-raise for bloodless and flu season? this is my pass-to restoration bowl full of wholesome ingredients like mushrooms, miso, bird broth and greens.

I experience like the name of this recipe desires a little little bit of explaining. even as it honestly is my pass-to healing bowl, I also admittedly devour this when I’m no longer feeling sick. Why? because it strikes a chord in my memory of certainly one of my favorite locations in the global.

you may don't forget returned in June, right once we were given engaged, C and our families and that i headed up the coast for an extended weekend in Mendocino. you could additionally understand that on my birthday, we also escaped the city for a weekend getaway in Mendocino.

INGREDIENTS


  • 1 tbsp olive oil
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 inch knob of ginger, peeled and minced
  • 2 cups shitake mushrooms, chop off ends but keep stems and caps
  • 12 cups chicken/vegetable stock
  • 1 8-10 oz chicken breast
  • 4 heads baby bok choy
  • 2 tbsp red miso paste
  • 1 tbsp rice wine vinegar
  • 1/2 tsp sesame oil
  • salt and pepper, to taste
  • 4 packages of rice noodles (I like Lotus Organic Brown Rice Noodles)

INSTRUCTIONS


  1. In a large pot warmness olive oil over medium warmth.
  2. add onions, garlic and ginger and saute for two-three mins.
  3. add mushrooms and stock and convey to a boil before decreasing to a simmer.
  4. add chicken breast and set a timer for 10 mins.
  5. After 10 mins use tongs to put off the fowl and allow it to cool.
  6. allow soup simmer for fifty minutes.
  7. once hen is cool enough to reduce, slice into small portions and upload lower back into broth.
  8. upload in bok choy and retain cooking until timer is up.
  9. In a small bowl combine, miso paste, rice wine vinegar, sesame oil and 1 tbsp of soup broth. Stir until properly mixed.
  10. add miso slurry into soup and stir till nicely-mixed. upload salt and pepper. cook for 5 extra mins.
  11. in the meantime cook dinner the noodles consistent with bundle education.
  12. add noodles to bowls and top with soup.
  13. Will preserve for up to one week in fridge.
